Cebuano Street Food Style Marinated Pork Belly with roasted squash and savoy cabbage salad

Pairing: Halia - Saison / Farmhouse Ale

 

3rd Course
Miso Buttercorn Soba with bay shrimp, bay scallops, and lemon cream sauce

Pairing: Sofie - Saison / Farmhouse Ale

 

4th Course
Kurobuta Pork Tonkatsu Rolls; tare marinated sliced pork belly, grilled and rolled with black pepper, negi, pecorino romano, and garlic. Panko breaded, deep fried, and served with a Japanese curried aioli.
